| | This is the vegetarian's answer to the chicken soup that you make when you are sick. And awfully good too. 12 cloves garlic, peeled and quartered 1 ½ T. butter 1 ½ T. olive oil 4-6 c. good quality broth or bouillion 1/4 c. chopped fresh parsley or cilantro 1/4 c. red wine, if you use it in cooking. Easier than pie! Heat the butter and olive oil in a pot until the butter is melted. Saute the garlic until soft, but don't let it get brown. Add the broth and bring to a boil. Add red wine and cook for 15-20 minutes. Add freshly ground pepper and the parsley or cilantro and dig in. By all means, eat the garlic. It's good for you! |
